It is that time of year again! the temperature is rising and so is the electric bill (due to my inability to deal with the heat; thank you inventor of AC)! Anyways, its also that time of year when you just start to harvest any vegetables you happened to plant a couple months back. today was one of those days. i harvested a rather large zucchini from my small garden and decided that i should put it to good use right away. i decided to make a sweet zucchini loaf. The recipe is quite simple and the outcome is fantastic. If you dont like eating zucchini in its natural form, then this might be the ideal way to eat it. Add walnuts and raisins into the batter and you'll have a loaf that you will keep coming back to again and again.

1 medium-large sized Zucchini, grated
1 Cup Flour
1 Cup of Sugar
2 large eggs
1/2 Cup vegetable or canola oil
1 teaspoon of baking soda
1/2 teaspoon of each: cinnamon powder, salt, vanilla extract
1/4 teaspoon of ground nutmeg

1/4 cup of walnuts & raisins if desired


 1. Pre-heat the oven to 350 deg F.

 2. In a large bowl, combine the sugar, eggs, and oil and beat until smooth and sugar is no longer grainy.

 3. Sift in the flour along with the baking soda, cinnamon, nutmeg, and salt and mix until combined (the batter will be thick, but not for long)

 4. Add in the grated zucchini and stir with a spatula until incorporated. Add in the walnuts and raisins if you desire at this point. By now, the batter should be more liquid due to the addition of the zucchini.

 5. Pour batter in a greased loaf pan and bake it for about 50 minutes to an hour or until center comes out clean when a toothpick is inserted.

6. When it's done baking, let it cool in the loaf pan for 10-15 minutes then remove from the pan and allow to cool completely before slicing.

New Beginnings.

Hello future readers!
    Name is Andrew and i finally decided it was time to start a food blog to document and share my passion for food with the rest of the world! After reading, watching, and recreating some dishes from other bloggers, i finally am here to start my own journey! this is going to be fun :)

 now i just need to get a better camera to take better pics, but that can wait.
